Last year I started experimenting with some vegan recipes. I found so many great ones, but this is my absolute favorite. If you haven’t tried cooking vegan before, don’t get scared. This recipe is so easy and definitely doesn’t “taste vegan.” I am not vegan or vegetarian but this is a recipe we make all the time, simply because it is a delicious, healthy alternative to regular alfredo sauce. The best part? It is SO EASY to make.
Here is what you will need:
-Raw, unsalted cashews
-Minced garlic (lots of it)
-Italian seasoning (basil and oregano are my favorites)
Here is what to do:
-Put the cashews in a blender and pour the water over them.
-Add the minced garlic and blend. Add more water if it’s thicker than you prefer.
-Once blended to your desired consistency, add your pepper and seasonings. (you can add salt, but I usually omit)
THAT’S IT. I told you this was easy. I don’t even heat it up, I just pour it over my hot noodles, and the pasta heats it up!
